Liz's Ginger Pear Cupcakes

Image
Today is Saturday! Checked the ole social calendar, and it is not blank! Lil 'Pizza Pop 'n' Parents Party' tonight, but we are the parents in this version. Woot woot! Obviously, there will be no pop. Probably Star Wars and whining, but who cares, I'm not hosting! I am bringing the dessert and I woke up bright and early at 8:00a.m. to whip it up so no little people would try to ruin it by helping. Buuut we have Nintendo now, so they were up with the sun and bothering me to help and lick stuff. Please ignore my lack of pictures, as I was mostly holding a beastly child back with one hand and trying to concentrate with the other. I made ginger pear cupcakes. Isn't that the combo everyone picks when they bring treats to a family gathering with six kids? They should! Because ginger and pear go together like...I don't know, ginger and bread. Ginger is such a fun flavor pop and pear is just sweet and mellow. I thought this one up because of that huge hunk of ginger ...

Corny Avocado Toast

Today is Saturday. Everyone loves a good millennial joke right? Just get a job and stop handing out participation trophies already! Hardy har har har. Ha ha ha. I just get a touch squirmy when I hear millennial comments though, because I have this mini fear that I am one...and I just confirmed via Alexa... I am. I'm a millennial. If you're my age, then you're one too. Also I don't "work for a living" either... awkward. But hell, we do have some positives, right? Like avocado toast! We millennials just love our avocados. I believe those are a healthy source of fat and nutrients, so really, we are quite savvy. Wouldn't ya know, I happen to make the world's best avo toast. I'm legit eating it right now, sighing with every bite, loudly claiming to my family and cat how I can't believe how awesome it is, while they look away, annoyed by my constant self-praise. It's got spice, sweetness, and a kiss of lime (how 'bout that?). Throw an over-e...

Eggy Cups 2 Ways

Today is Saturday. My friend from grade school had this sign in her dining room that said "There's never enough thyme." What did it mean? It's so gastro-existential. I think of it EVERY time I use thyme. Thyme after time... I hope you have enough thyme to make this breakfast. I hope we all have enough thyme. There really is never enough. It's a hom-o-nym. Just kidding, no it isn't. I have just been trying to add more Dr. Evil into my blog. Regardless of how much thyme you have, you can make one of these two versions of the same breakfast! Like homonyms of eggs. See, we are a house divided. Some of us prefer scrambled, and some of us want to pop the yolk of a delicious, luscious over-easy egg. My preschooler is our swing state, vacillating between the two, and even experimenting with over-medium eggs this week. He is still trying to find himself. So, this morning I made these cute little babies both ways so we could all have our favorites. These are perfec...

Fluffy Scrambled Eggs

Image
Today is Saturday. Good morning! Or, in my house, "I'M STARVING!" Yikes. Since hunger levels were fierce, and I spent all day baking scones yesterday, no pancakes would be happening today. I quickly whipped up the world's fluffiest scrambled eggs and boom- less screamy kids. I know you know how to make scrambled eggs, but this recipe is the very first thing I ever taught myself how to "cook" when I was a young 20-something, still living at home, finally ready to stop eating cereal for all four meals of the day. So it's near and dear to me and you have to make it. Also, I am taking a virtual cooking class today! The ingredients I have to buy are Starbursts and radicchio, so it should be insightful. More to follow, should it be better than a Starburst Salad. And then it's date night yo! Hot dogs for these babies. Liz's Fluffy Scrambled Eggs  Ingredients Note the beauty of these ingredients against the stark contrast of no house plants in the shot....

Blueberry Sourdough Pancakes

Image
Today is Saturday. I think mainly just to annoy me with his perfectness, my husband makes pancakes from scratch most Saturday mornings. He just couldn’t let cooking be my thing, could he? I can’t stay mad though because his cakes are so fluffy and delicious. But this particular Saturday he slept in longer than I needed to and, I am in my new "I have a food blog so I need to make some food” mode so I made the pancakes. Since I can’t compete with his, I had to resort to making sourdough pancakes. I get that not everyone has a starter. During the quarantine I held out for a long time making regular old banana bread, but at some point, I jumped on the sourdough bandwagon. I murdered the first starter gifted from a neighbor, but when my best friend gave me one, I was determined to make it work. So now we eat even more carbs- yaay. I haven’t found a lot of recipes with which to use my leftover starter – they all seem to require more leftover than my little guy can muster up each w...

Liz: On Picky Eaters

Picky eaters? Never liked ‘em. Don’t really believe them either. I allow everyone maybe five foods they truly hate. You like mushrooms. You do! You may just need to give them another chance. There are so many different ways to prepare different foods and so many different seasonings and sauces that I just can’t believe someone when they tell me they don’t like something. I usually blame the parents. It’s probably your mom’s fault you think you don’t like fish or green beans. Well, you are the chef now, and food has come a long way since your mom was cooking for you every night. If I can learn to love a good honey balsamic marinade when honey is the most disgusting food on the planet, you can do it too! And any little people in your home may just follow suit. ;0)
